Healthy Oatmeal Cookies

I was really wanting to find a good recipe that is healthy, yet delicious at the same time. I really think i found the perfect one. I have made these twice in the past week and everyone seems to love them! I decided to share the recipe (which i found somewhere on pinterest)!

Ingredients:

Dry ingredients
  • 1 cup Whole Wheat Flour (I used white)
  • 1 1/2  cups of large Rolled Oats
  • 1/2 tsp of Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 TBSP Cinnamon
  • 1/2 tsp Nutmeg
Wet Ingredients
  • 1/2 cup Honey (tip: run measuring cup under hot water and don't dry it out, then pour your honey in, and it wont stick!)
  • 1/2 cup oil ( I do 1/4 cup oil, 1/4 cup applesauce)
  • I TBSP Molasses
  • 1 egg (beat with 1 TBSP water)
  • 1 tsp Vanilla
If you like
  • 1/2 cup Raisins
  • 1/2 cup Walnuts
Preparation
  1. In a large bowl, mix all the dry ingredients together.
  2. In a medium bowl, mix all the wet ingredients together.
  3. Mix all the wet stuff with the dry stuff. Add raisins and walnuts.
  4. Cool the mix in the fridge for 20 minutes
  5. Preheat the oven to 335 degrees (lower temp so honey doesnt melt)
  6. Drop by the teaspoonful onto your baking sheet. (I recommend lining with Parchment Paper)
  7. bake for 12- 15 minutes or until golden at the bottom of cookie
  8. Enjoy!

Hello my lovely friends, family and others... hopefully others :) I am sorry that I have been distant from the blogging scene... I can't seem to find my camera right now and I am so sad because I have so many great baking/DIY things that I want to share. I made the best healthy oatmeal cookies with no sugar or butter, I want to teach you how to do the rose on a cupcake and I also am planning on making a body scrub. I will let you know how that goes. Anyway, thanks for keeping up and I promise to come back with great posts. Hopefully tomorrow when I find my camera! Love you all.

The Little Black Dress

My friend Sara and I planned a We don't Heart Valentine's Day party. The requirement: a Little Black Dress (LBD). Whoever said when you dress up, you should go out was very wrong.We did just the opposite. It was priceless. Not saying that all of these girls don't have boyfriends because some of them do, we just couldn't talk about boys all night. We had so much chocolate it was insane. It was fun to just forget about all the boys for just one night and have a girls night in. Black rose pedals, balloons and streamers were a must.

Valentine's Day

I don't know why, but this year I am more excited than usual for Valentine's Day. I remember when my parents used to make my sisters and me pink heart shaped pancakes for breakfast (*hint *hint mom). This year I am going to be watching a good chick flick (undecided between Breaking Dawn, Dear John or going to The Vow) and baking some fun treats. What are your plans for Valentine's Day?

Thoughts

Over the past couple of months or so I have found myself in a little bit of a rut. I didn’t feel like getting ready for school in the mornings and I would come home and just lounge around. I was starting to listen to those people who would say “wow it must be awful moving your senior year” and I was thinking how much easier my life would be if I was back in Orem with the same awesome friends that I have had for so long, or if I was going to watch the Orem Boys win every single basketball game. Sleeping in and coming home to take a nap all sounded lovely, but I would gain nothing from that.

During my trip to New York, something changed me. I became so much more adventurous and had this sense of independence that I have never had before. I realized there that I (with the help of my mom) could navigate my way through the city and that walking 10 miles a day was fun. I realized that after 25 days of no sugar, I could say no to anything, and that after winning a skate competition, I could do anything as well.
So I made myself a little promise… I will be productive with my time. I have loved coming home from school and actually doing something worthwhile. I feel so much more useful to the world and I feel way more accomplished about my day. Some things I do are take my dog for a walk, write a missionary, go for a run, skate, blog, bake, swim.
Before, I liked the idea of coming home from skating on a Friday night and just watching a movie then going to bed. I decided that it is my senior year and if I want to have fun, I have to look for it. Like my mom always says “The fun won’t find you, you have to find it” so to change that up, I make plans now which is kind of new for me. Like driving myself to Rexburg on Friday, I had such a blast and all it took was a little effort! It is also nice not to rely on what others are doing. Do what you want to do when you want to do it.
I feel completely changed and different after I put a little more effort into the things I do with my life. I want to have a story to tell and I wasn’t going to have one unless I got off my butt and did something. That is just what I did and it really has changed the way I view life.
Moving my senior year was one of the best things for me. I was due for a little adventure in my life and I want to show those people who thought it would be awful for me wrong. I love Orem and I miss it every day but Park City is my home now. I find the little quarks about this place that make me love it more and more every day. I wouldn’t change any of the crazy experiences I have had living here for anything in the world. They have definitely made me stronger and have made me realize what the real world is like. This is my home now. I love it and I am going to make the most of it and my beautiful life.

Gold to Rexburg

This weekend I had a skate competition and I took first! I was very excited. very very. After my competition, I drove myself up to Rexburg to visit my sister Rachel. It was very adventuresome if I do say so myself. We went sledding down an ice patch  hill and I thought I was going to die. But it was good to see my sister and now I am completely ready to go to college wherever that may be. I really did miss rach's hilariousness if that is even a word. She is coming to visit this weekend and we have lots of fun plans.

Hope everyone's weekend was just lovely. Jane by design is on tomorrow at 7. I love it and you may or may not, but it is really amazing.

Flared Pants 
 


I love the look of flared pants with heels! I just bought a pair in new york and I think that they are just the best things ever. I love how they are extra long which make you look extra tall. I wore mine the other day with flats which looked awkward, these pants definitely look best with a chunky heel of some sort. I like the look with a blouse tucked in.
Don't you just love SJP's hair curled like that? flat on top, curled on bottom. yes please.

The secret restaurant Hudson Clearwater

Saturday was a very busy day for us. We started out the day by doing some shopping then later that evening we decided to walk along the Brooklyn Bridge.We were planning on staying in Brooklyn for pizza at Grimaldi's, but when we got there, the line to eat was out the door! We stopped at Starbucks for a quick hot chocolate and some pumpkin bread (my favorite) We headed back to Manhattan. I read on a Cup Of Jo that there was a secret restaurant called Hudson Clearwater so my and my mom looked it up. We found the address, but it was so hidden that we didn't know where the door was! We almost turned around but then we realized this creepy green door in the middle of this brick wall. We walked in and it let us to this quaint little garden with tight strung above us. It was so cute. Once we opened the curtain to the restaurant, not even knowing what to expect, there was a fun atmosphere of friendly people and candles all through out the restaurant. It was so cool to know about this little place that a lot of New Yorkers probably don't even know about! After our dinner we walked through Rockefeller which was the last thing on our list of place to see and things to accomplish while in NYC. We got there are saw the skating rink. My mom told me that I should go but she doesn't like skating so I would have to go alone. I was hesitant to skate alone and the skates would be awful but I did it! It was so amazing. I LOVED IT! Wow my trip to new york was so awesome! I miss it already. My mama was the best travel buddy/ subway navigator ever!

Like I said, we splurged... all I have to say to that is thank goodness we walked around 10 miles a day. Day three was a rainy one, but a rainy one well spent! We went to the Guggenheim which was so interesting. Seeing original Picasso and Van Gogh is something really amazing. After our museum tour we walked across the street to central park in the rain with our umbrellas. We found our little cafe that we were looking for. Cafe Lalo. It is in the cutest part of town and it had amazing waffles with cinnimon whipped cream. oh and I can't forget the little stop at Magnolias again on our way home... don't worry we bought some to stay and eat there and to take home. Because of all the walking, we stopped at our hotel and took a power nap which turned into 2 hours of much needed rest. we woke up to a pretty sunset and got ready for the Phantom of the Opera. It was absolutely unreal how well those people can sing. The settings and props were so amazing as well. I loved it. That lovely outing followed by a midnight cupcake from magnolias from our earlier stop during the day.
