Sunday waffles

When I could eat gluten (three years ago) my family would make waffles every single Sunday and it soon became my favorite mini tradition. I went without Sunday waffles for sometime until I found this recipe that my cousin posted a while back. Now Taylor and I try to continue this little tradition!

These waffles are gluten free and are paleo which is perfect for those of you on the paleo diet!! My dad is gluten free as well and is a total foodie. If something isn't delicious he wont eat it! Well he eats these and claims that they are better than normal waffles so there you go!! Deano said it!

Paleo Waffles
Ingredients:
Makes 4 – 8 waffles
1 cup almond flour
1/2 cup tapioca flour
2 tsp. baking powder
1 large egg
1/4 cup butter
1/2 cup unsweetened coconut milk (not canned) (I use almond milk)
1 tsp. lemon juice
Instructions
Grease & Preheat waffle iron
1. Combine all ingredients and mix well.
2. Pour mix in waffle maker and let waffles cook
3. Serve with maple syrup and whipped cream, fruit, berries, or whatever your heart desires!

Taylor and I have been married for 3 months! It has been such an adventure and exciting time for us!! Taylor is the kindest person I know. He makes me calm, and makes me laugh. He helps me be less judge mental and is the best darn kisser in the world! I love you Taylor! I promise I wont do this every month... This one was just fun for us!!

Taylor brought me home flowers after work. He works all day Saturdays and so he came home with the best surprise!! We went on a date to Callaway's which is Italian. After our dinner we came back and did what we do best. Relax and watch Guardians of the Galaxy. Tay and I have a mutual love for Chris Pratt so it's ok. 

I love flowers. T know's me too well!

Happy Friday!

Happy Friday and Happy April!! I have been busy working on my portfolio and a "recipe book" for school so I haven't been posting much! I graduate in one month then I will hopefully have more time to blog since it is my favorite thing to do in my spare time!!  

I got these donuts from my favorite donut shop across the street from where i live, Johnny Oh's Spudnuts in logan. OMG I love them. I had never been a huge fan of donuts until recently because they actually have gluten free options and they are delicious!!! It makes me happy!
